fresh vegetable juice

My dad went to visit his family in Missouri and brought back vegetables for dayyyssss. Both of my uncles (my dad’s brothers) have beautiful gardens, complete with almost every vegetable you can imagine – 300 tomato plants anyone?! It’s basically my dream come true. But since I can’t have a garden that big where I live, I’ll settle for vegetables from their garden.

I was the recipient of more beets, carrots, tomatoes, cucumbers, onions, radishes, potatoes, zucchini, squash, and cabbage (plus dill pickles and pickled beets) than I know what to do with. ThIMG_7149at is, until I decided to make an afternoon pick-me-up.

Vegetable juice can be made two ways: in a juicer or in a blender + nut bag. Right now I’m doing all of my juicing in the Vitamix and then straining through a nut bag. The end product is the same, but it’s a h*ll of a lot easier.

Ingredients
2 beets
2 carrots
1 large cucumber
1/2 zucchini
3 leaves of kale
3 cloves of garlic

Directions
Add all ingredients to the blender (in my case I use a Vitamix), and top with 5 cups of water. Blend on high until all ingredients are pureed. Pour through nut bag to strain and remove pulp.
