Chicken Quinoa Stew

One of the ways I love & serve my community is by making meals for families with new babies. It’s an opportunity for me to love my friends, my church community, or a new mom that I don’t even know. I’ve enjoyed creating and trying new recipes – and then saving some for our family too (bonus!).

One of my favorites has been Chicken Quinoa Stew. This recipe is so delicious and so easy, and the only thing you have to chop are the sweet potatoes. Throw everything into the crockpot and you have dinner 8 (or 4) hours later. Yes, it’s really that simple.

Ingredients
1.5 lbs of Chicken Breast
5 cups of Chicken Broth
2 cups of Quinoa
1-2 large Sweet Potatoes
1 can Black Beans
1 can Diced Tomatoes
1 packet of Taco Seasoning (or Chili Seasoning)
2-3 cloves of fresh garlic, minced
Salt & Pepper
Flat Leaf Parsley, chopped (garnish)

Directions
Spray crockpot with olive oil spray and add chicken to bottom of the slow cooker. Meanwhile, chop sweet potatoes into small cubes and place into crockpot. Add chicken broth, black beans, diced tomatoes, taco seasoning, and S&P. Set timer and cook. About 1 hour before stew is finished, add quinoa (note: for a much thicker stew, add quinoa at the beginning).  Before serving, use 2 forks to shred chicken.

Garish with fresh parsley and salt & pepper. Serve warm.

differences between first & second pregnancies: running edition

DSC_0936I’ve been running most of my life, so I didn’t want to stop when I became pregnant. But running with #2 has proven to be much different than running with #1. I quickly realized no two pregnancies are the same and priorities tend to shift from pre-baby to post-baby.

Running when pregnant with Mr. President was a lot easier – from a time, weather, and physical (I wasn’t sleep deprived) standpoint – but I’ve made a commitment (to myself, my family, and baby #2) to run when I can.

Time
I wish I would’ve realized this when I was pregnant with #1 but I had all the time in the world. Time to myself. Time to run whenever I wanted. Time for the gym. Time to recover after a run. Time for stretching. Time for yoga. Time for me.

Now, my “me-time” is devoted to the cutest little boy in the world. Of course I wouldn’t change it for the world but my “me-time” is limited. Especially since I stay home with LJ and I have a husband that travels a lot for work. I have to get my runs in when I can – and sometimes that’s hard.

Weather
I was pregnant January – October with Mr. President and while those first couple of months were cold, the remainder of the pregnancy was great for running (I’m a Florida girl at heart so the heat doesn’t bother me). By the time I realized I was pregnant with #2, it was late September and the weather was starting to change. Since I run while pushing LJ, I have to ensure that the weather is warm enough to take him out. Anything below 30 degrees and we’re just not running. Thankfully, I received a BOB weather shield for Christmas – and it’s been a lifesaver through the winter – but these last few weeks have been miserable and I’m not comfortable running with him (add snow/ice to the mix and it’s downright dangerous).

Physical
I’m tired. Like, really tired. At 16 months, LJ is just now sleeping through the night. And after 16 months of interrupted sleep, sometimes the last thing I want to do is bundle up for a run. Is it an excuse? Probably, but it’s also important for me to listen to my body. With #1, I slept 9+ hours/night. I had time to sit down and relax (the word relax is no longer in my vocabulary). I had time for naps (even though I’m not a good napper). In other words, I was tired because I was growing a baby but nothing like I am now.

…But I wouldn’t trade sleep or time with LJ for 1,000 runs. Plus, he keeps me very busy chasing him. Which counts for something, right?!

running updates: 29 weeks

Wait, it’s already the third trimester?! When did that happen?

This pregnancy has flown by. I wish I could say the same thing about the winter. Unfortunately the winter has taken a toll on my running. Between snow, ice, and below freezing temperatures (+ double digit wind mph) it’s been tough for Mr President and me to hit the trails.

Thanks to my BOB weather shield, I’m comfortable running with LJ when temperatures are 30 degrees or higher (and even then, he’s completely bundled up). I try to make our runs fun with signing & talking, plus we run on the trail where there’s lots to see (metro, bikes, runners, dogs). It’s about as good as it gets for winter running.

Workouts at 29 weeks
Sunday
: 3 mile run with stroller +BJ, plus it was 45 degrees!
Monday: basement workout, including TRX, weights, and plyometrics
Tuesday: 2 x 1.5 miles, ran to/from library for story hour (with stroller)
Wednesday: 3 miles (with stroller)
Thursday: off
Friday: basement workout, TRX

This is my best + most productive week in awhile! The last couple of weeks have been plagued by the stomach bug, below freezing temperatures, and a husband that was gone for 10 days. Thanks to something new called sleep and slightly warmer temperatures (read: just barely above freezing), I feel good!

40 days of happy

I like to think I’m a {happy} person. Sure, there are times when I’m nothappy, or afraid, or stressed, or unsure, or angry. But I like to think that’s just the devil trying to get the best of me (and sometimes he wins).

I’ve never been one to “give up something” for Lent. I understand why people do it, and I applaud those who forgo wine or chocolate for 40 days (although the last 2 out of 3 years I’ve given up wine for lent too – haha). This year, instead of giving something up, I decided to give myself something: time spent thinking about & reflecting on all of the things that make me HAPPY (and thankful)!

They are little things – like Mr. President’s smile. Or big things – like a house that keeps us warm, dry, safe on cold winter nights. It can be anything – anything that makes you HAPPY.

We’re less than one week into the Lenten season.

What makes you HAPPY?

one pot pasta

Last week BJ was craving vegetables and I was craving easy (an easy dinner, that is).  So I scoured my cookbooks & Pinterest and settled on one-pot pasta. I mean, what’s easier than cooking everything in one pot. Yes, even the pasta cooks with the veggies.

Ingredients

  • 1 pound spaghetti
  • 1 pound baby bella mushrooms, thinly sliced
  • 2 zucchini, thinly sliced and quartered
  • 2/3 cup peas
  • 2 cloves garlic, thinly sliced
  • 2 sprigs thyme
  • sea salt and freshly ground black pepper, to taste
  • 1/3 cup Parmesan Reggiano cheese, grated
  • 1/4 cup milk (you can use heavy cream if you want/like creamier)
  • optional: add chicken if you want some protein

Directions

In a large Dutch oven over medium high heat, combine spaghetti, mushrooms, zucchini, peas, garlic, thyme and 4 1/2 cups water; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer, until pasta is cooked through. Stir in Parmesan and milk.

big announcement…

Coming May 2015!

Yea, yea, I know I’m 27 weeks into pregnancy #2. And I know that some of you already know. But there are a lot that don’t know, or think you missed a big announcement. Well, you didn’t. I’ve just been busy, or lazy, or sick.

By the time I realized I wanted to announce it, I had to find the perfect shirt for Mr. President. When I found the perfect shirt, and eventually purchased it, it took another 3 weeks to ship. Oye.

So, here I am. 27 weeks pregnant and announcing my pregnancy. Which some of you already know because you’re image (3)my friend or follow me on Instagram or read my blog. But if you ‘ve been busy, or lazy, or sick (just kidding), I’m due with #2 and we couldn’t be more excited! Just like Mr. President, baby #2 is a surprise (gender, that is) – and I have to say, it’s a lot easier not to find out the second time around.

I’m still not sure LJ knows what’s going on, but he loves “mommy’s baby belly” and gives the belly hugs, kisses, and pats (oh, and “honks” my outie belly button like a horn) many times a day. It’s really the sweetest thing I’ve ever seen.

If you have any advice for 2 under 2 – and more like 2 under 19 months – I’ll take it! Some days I’m not sure how I’m going to handle the sleepless nights (LJ still doesn’t sleep through the night), but I know {love} – and lots of it – will get me through!

salsa verde chicken

I registered for & received a crockpot for my wedding. 4.5 years ago. And I haven’t used it since.

That all changed 3 weeks ago when I decided I wanted to cook more and had a little extra time on my hands. Cooking with a crockpot is fun! You just throw everything in and come back 8 hours later. viola. Dinner.

I was craving fajitas or some variation of the dish, so I decided to try {}. For starters, this recipe is so easy (hello, 3 ingredients + seasoning), but what I loved most is that there are endless possibilities with this dish. Avocado, cilantro, salsa, tortillas, cheese, you can add – or take away – anything you want and it’s still delicious!

For dinner, I ate salsa verde chicken with tortilla, cheese, cilantro, avocado and a side of sauteed peppers & onions; for lunch the next day, I served over rice with avocado and cilantro. Both ways are yummy – or you can make it any way you want!

Ingredients
1.5 lbs of Chicken
8 oz jar of Salsa Verde
1 beer (I used a lager because I’m pregnant and there aren’t many alcoholic choices in our house, but I’d probably use Corona or Modela next time)
1 tbsp cumin photo 1 (7)
salt & pepper

Toppings (add or delete as desired) 
cilantro
avocado
cheese
sour cream
sauteed peppers & onions
rice & black beans
cheese
tortillas

Directions
Combine ingredients in crockpot, stir to mix everything together. Program to 8 hours and start. 30 minutes prior to serving, shred chicken. Serve as a fajita, over a salad, or alone.

cranberry banana breakfast cookies (+ Skoop protein)

One of my New Year goals was to spend more time in the kitchen – more time experimenting, trying new recipes, and coming up with delicious (and usually healthy) items for my family. BJ loves breakfast but is usually out the door before I have time to make something “elaborate”, so I decided to make breakfast cookies that he can grab on-the-go. My cranberry banana breakfast cookies are gluten + dairy free, but totally delicious + healthy.

These were a huge hit with BJ and Mr. President kept coming back for seconds. If you’re looking for an easy recipe that is delicious and fulfilling, try these breakfast cookies.Note: I added Skoop B-Strong Protein to half of the batch for a little added extra. The recipe is great with or without the protein.

Ingredients photo 3 (10)

  • 1½ cup Old Fashioned Oats
  • 1 cup Unsweetened Coconut Flakes
  • 1 Tablespoon Flax Seed
  • ½ Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • ¾ Cup Slivered Almonds
  • ½ Cup Chopped Dried Cranberries
  • 3 Ripe Bananas, Mashed
  • 1 Tablespoon Honey
  • 1 Teaspoon Vanilla Extract
  • 2 scoops of Skoop B-Strong Viva-nilla protein powder (optional)

Directions
Preheat the oven to 350 degrees and lightly oil a baking pan or line with parchment paper. Mix together all dry ingredients in a large bowl. Add the mashed bananas, honey, and vanilla extract. Form into cookies with 2-3 tablespoons of the mixture and place on the baking sheet ½ inch apart. Bake for 20-25 minutes or until golden brown

a day in the life…

For today, I decided to link up with some fabulous bloggers to share “A Day in the Life…”. I love to know how everyone does it – full-time working mom, part-time working mom, stay-at-home (but always busy) mom. What happens each day? And how does everyone do it all?!

For the time being, I’m mostly a stay at home mom – but work about 10 hours/week consulting for small, local companies. I don’t have help/nanny so I try to squeeze everything in while Mr. President is sleeping. BJ travels for work (often gone 2-3 nights/week), so sometimes it feels like a lot. But I love it, and wouldn’t trade it for the world.

Even though I’m sharing yesterday with you, this is a pretty typical day in the life of {will run for margaritas}. BJ is out of town (like most weeks), so I’m covering it all today.

2am: Mr. President wakes up. Crying. Screaming. “Mommy”. Poor guy is teething and congested. After 10 minutes, I go in, change his diaper, and try to calm him down. He calms down, snuggles up to me, and we rock as I try to get him back to sleep.

No such luck.

We end up on the floor, in a makeshift bed. He’s up until 4:30am but eventually falls back to sleep.

6:30am: Mr. President wakes up and is ready to go. Me? Not so much.

We get up. I read him a few books. And head downstairs for breakfast.

7:15am: Breakfast. Today we’re having waffles (slice of toast for me), fresh fruit, and a smoothie. I “splurge” on a cup of Green tea.

8-9:30am: Playtime. LJ and I hang out. Lots of trucks, puzzles, books, and learning. I also vacuum the house during this time, since I don’t dare vacuum while he’s asleep (moms, can I get an AMEN?!)

9:30am: Nap for Mr. President, free-for-all for me. Put away clean dishes, put dirty dishes in the dishwasher. Clean-up from breakfast. Start a load of laundry. Answer emails. Do 1 hour of work. Pick-up the house. Make the bed. Put away clean clothes. Maybe, just maybe, I have time for a quick (uninterrupted) shower.

11am – 2pm: LJ is up and ready to play. We eat lunch. Today we’re having fish, rice, and avocado. After lunch we bundle up and head out. Errands include Whole Foods and the Post Office. We go to the library and meet up with a friend + her son. The library is a great place for the boys to run around and burn off some energy.

2pm: Nap for Mr. President, free-for-all #2 for me. 45 minutes of work. More laundry. Clean up lunch, toys, snacks on the ground. 30 minutes cleaning the basement (I’ve committed to cleaning the basement since baby #2 is on the way). Prep dinner.

3:45-6pm: Snack time. Play time. It’s warm – for January – so we bundle up and go for a run + post-run playtime at the park. We see friends at the park and play for an hour. Head home to eat dinner.

6:15pm: Dinnertime. Salsa verde pulled chicken + corn tortillas, avocado, and sauteed peppers + onions. It’s a huge hit (recipe coming soon).

7:00pm: Bath, books, bedtime. I read anywhere from 5-10 books before bed, we love to read. After I turn out the light, I rock with LJ and sing to him. It’s one of my favorite parts of the day! Just the two of us.

8:00pm: Mr. President is in bed, sleeping. I pick-up bathtime toys, clean-up the kitchen, straighten up the playroom. Grab laundry from the basement and start folding. Turn on trashy TV, tonight it’s BRAVO’s Millionaire Matchmaker (and if I wasn’t pregnant, I’d be drinking wine too).  Grab my computer, answer a couple of emails. Unwind.

10pm: Bedtime for me. Can’t wait to sleep!

There you have it.  A typical day in my life as a {part-time work-from-home, runner with a 15mo old + #2 on-the-way mom}.
